2 chicken thighs, cut into 2
5 large shrimp with tails removed
1 Toulouse sausage, cut into slices
1 tsp. olive oil
2 tbsp. Cajun spices
2 large potatoes, peeled and cubed
2 mini red peppers, cut into strips
1 small zucchini (you can also use a yellow zucchini)
2 small Nantes carrots and ½ cup tomatoes, chopped
1 tsp. chopped fresh rosemary
1 tbsp. chopped fresh thyme
1 tbsp. chopped fresh Greek oregano
1 tbsp. garlic, finely chopped
Salt & amp; pepper to taste
Preheat the oven to 375F.
Place the chicken, shrimp and sausage in a large bowl. Add the Cajun spice and olive oil, stir and set aside.
In another bowl, combine all the remaining ingredients.
Place a large sheet of aluminum foil on a baking sheet (20cm x 30cm), then place a sheet of the same size of parchment paper on top.
Place the marinated meats in the middle of the parchment. Surround the meats with the vegetables.
Lift the parchment paper along the long ends and fold it back. Fold the sides. Fold the foil in the same way as the parchment package.
